White Chocolate Mocha Nut Butter Cookies

Ingredients

  • 1 cup butter unsalted
  • 1/2 cup sugar
  • 1 tbsp water
  • 2 tsp vanilla nut coffee grounds
  • 2 tsp vanilla extract
  • 1 3/4 cups all-purpose flour
  • 1/4 cup white chocolate hot cocoa powder
  • 1/2 tsp salt
  • 1 cup sliced almonds finely chopped

Instructions

  1. Preheat oven to 325° F.

  2. Cream together butter and sugar until fluffy.

  3. Dissolve vanilla nut coffee grounds in water; stir into creamed mixture with vanilla extract.

  4. Sift flour, hot chocolate powder, and salt into the creamed mixture; beat until smooth.

  5. Blend in finely chopped almonds.

  6. Shape dough into 1-inch balls; place on generously greased baking sheet.

  7. Bake at 325° for 12-15 minutes.

  8. Cool on wire rack and enjoy.
